SpringBoot has an issue creating bean with MongoDB Java ClassFile Version

Question

I've looked at countless articles to try to figure out the issue. The only debug statement that I think appears to be the problem is the Java ClassFile Version 61.0, but I'm not sure why that would be the case. Here's the code below.
