Introduction

A cup of black coffee

Coffee is a beverage brewed from roasted coffee beans. Darkly colored, bitter, and slightly acidic, coffee has a stimulating effect on humans, primarily due to its caffeine content. It has the highest sales in the world market for hot drinks.

The seeds of the Coffea plant's fruits are separated to produce unroasted green coffee beans. The beans are roasted and then ground into fine particles typically steeped in hot water before being filtered out, producing a cup of coffee. It is usually served hot, although chilled or iced coffee is common. Coffee can be prepared and presented in a variety of ways (e.g., espresso, French press, caffè latte, or already-brewed canned coffee). Sugar, sugar substitutes, milk, and cream are often added to mask the bitter taste or enhance the flavor.

Though coffee is now a global commodity, it has a long history tied closely to food traditions around the Red Sea. The earliest credible evidence of coffee drinking as the modern beverage appears in modern-day Yemen in southern Arabia in the middle of the 15th century in Sufi shrines, where coffee seeds were first roasted and brewed in a manner similar to how it is now prepared for drinking. The coffee beans were procured by the Yemenis from the Ethiopian Highlands via coastal Somali intermediaries, and cultivated in Yemen. By the 16th century, the drink had reached the rest of the Middle East and North Africa, later spreading to Europe. (Full article...)

Starmaya is an F1 hybrid coffee tree that can be propagated by seed rather than through somatic embryogenesis (SE). It was propagated from a parent plant that is male-sterile. This facilitates controlled pollination because breeders do not have to manually castrate each individual flower of the autogamous coffee tree.

The Starmaya tree was found to have a high fruit yield potential, resistance to coffee leaf rust, and the potential (when grown at higher altitudes) to produce a beverage of very good quality. It was also found to be effectively propagated in a seed garden. Starmaya is the first F1 hybrid coffee tree effectively propagated by seed garden, proving a cheaper and easier method of F1 hybrid propagation than the more expensive and technically difficult SE method.

Starmaya coffee is being registered for intellectual property rights protection through the International Union for the Protection of New Varieties of Plants (UPOV). (Full article...)

Extracting a doppio

Doppio espresso (Italian pronunciation: [ˈdoppjo]) is a double shot which is extracted using double the amount of ground coffee in a larger-sized portafilter basket. This results in 60 ml (2.1 imp fl oz; 2.0 US fl oz) of drink, double the amount of a single shot espresso. Doppio is Italian multiplier, meaning "double". It is commonly called a standard double, due to its standard in judging the espresso quality in barista competitions, where four single espresso are made using two double portafilters.

A single shot of espresso, by contrast, is called a solo ("single") and was developed because it was the maximum amount of ground coffee that could practically be extracted by lever espresso machines. At most cafés outside of Italy, a doppio is the standard shot. Because solos require a smaller portafilter basket, solo shots are often produced by making ("pulling") a doppio in a two-spout portafilter and only serving one of the streams; the other stream may be discarded or used in another drink.
